Recipe for Nomato Sauce

2 cloves garlic, minced
1 medium onion, diced
3 carrots, shredded
1 small beet, shredded
1/2 cup pumpkin puree
2 cups water
1 Tbsp veggie broth mix
1 T lemon juice
10 pitted kalamata olives, rough chopped

Healthy saute onions in large soup pot. Sides need to be tall enough to use immersion blender without splashing over.

When onions are slightly translucent, add minced garlic, carrots, and beet.

Cook a few minutes until all veggies are soft. Add pumpkin puree, water, and veggie broth mix. Cook about 10 minutes.

Add lemon juice and olives.

Blend with an immersion blender in the soup pot. Pulse until you achieve the desired texture.
