Recipe for Golden Cauliflower Soup

3 cloves garlic, minced
1 onion, chopped
1 head cauliflower, cut into pieces
3 carrots, chopped
1 stalk celery, chopped
4 cups water
2 T Veggie broth mix
1/2 tsp. nutmeg
1/4 cup sunflower seeds
1/4 cup green pumpkin seeds
2 cups chopped kale leaves

Mince garlic and let sit at least 15 minutes to enhance health benefits. Prepare the rest of the mise en place.

Place all ingredients except seeds and kale in soup pot. Cover and simmer for 5 minutes or until vegetables are just tender.

Remove about 1 cup of liquid from the soup pot and set aside to use to rinse Vitamix at the end of blending process.

In batches, blend 2/3 of the soup liquid and vegetables with the seeds until smooth and creamy. After all blended vegetables have been returned to the pot, put the reserved cup of soup liquid in Vitamix, blend for 15 seconds or so, and pour in pot.

Stir in the kale. Simmer a few minutes until kale is tender.

Variation: Add kale to the pot before blending, and simmer for a few mintues until tender. Then blend as above for a beautiful light green soup!
