Recipe for Delicata Squash Rings with Soft Polenta




A recipe in three parts: Pressure cook the polenta, steam the squash, and assemble the topping.

Polenta in the Instant Pot

1 cup polenta
4-1/2 cups water

Whisk together polenta and water in the instant Pot until combined.

Pressure cook for 9 minutes. Let pressure come down naturally, about 10 minutes. Open and remove lid. There will be liquid at the top, and some lumps. Stir well with a whisk until creamy.

For Garlicky-Cheesy Polenta: Whisk the following ingredients into the polenta, making sure the entire mixture is homogenous and creamy. Add additional hot water if you want the mixture to be thinner.

1/4 cup nutritional yeast
1 tsp. dried onion flakes
1/2 teaspoon garlic powder

Delicata Squash Rings

1 delicata squash (does not need to be peeled)

Slice the squash crosswise into 1/2" rings. Use a spoon to remove seeds and stringy bits (put them in compost). Arrange rings in steamer and steam for about 7 minutes or until soft when pierced with a fork.

Topping

Mix together diced kalamata olives, diced red bell pepper, garbanzo beans, and raisins.

Arrange for serving

Spoon polenta onto individual plates. Place squash rings on top of polenta in an overlapping pattern. Spoon topping over squash rings and serve.
